Healthy Vegan Oatmeal Cookie Treats

These vegan Oatmeal “Cookie” Treats saved my life while I was participating in a Daniel Fast a few years ago.  The Oatmeal Cookie Treats were my go to dessert when I wasn’t allowed to eat anything with added sugar or flour for 3 weeks. I love desserts and carbs so fasting them for 3 weeks straight was quite a challenge but I found alternative no sugar, no flour, no egg recipes online.  Now that I am starting a weight loss challenge and have to carefully watch what desserts I eat every week, I decided to add the Oatmeal “Cookie” Treats to my meal plan.

I discovered the Oatmeal Cookie Treats recipe on the Ultimate Daniel Fast Recipe website. The recipe has 8 ingredients that you mix together in one bowl, then you scoop out the “dough” onto a cookie sheet and bake for 10-12 minutes.  The treats are good for about a week.  I kept these treats in a sealed container on the countertop and would eat them whenever I got the urge for something sweet.  Now, this is, of course, nothing like a traditional cookie recipe, it doesn’t contain butter, sugar, eggs, etc.

This recipe is full of nuts. The “Flour” ingredient is nothing but minced almonds.   If you or anyone in your home has nut allergies I definitely would not make this dish. Additional, this recipe can be a little on the expensive side due to all the nut ingredients but it is delicious and satisfies the urge for a sweet treat.

One of the things I love about this Oatmeal Cookie treats recipe is that you can modify it to your liking.  My favorite combination is with peanut butter and raisins but if you like Almond Butter and Cranberries make adjustments as needed.

Oatmeal Cookie Treats’ Ingredients

Vegan Oatmeal Cookie Treats

Makes about 24 oatmeal treats

  • 1 cup almond flour
  • 1 cup peanut butter (or cashew or almond butter)
  • 1/2 cup unsweetened apple sauce
  • 1 cup old fashion rolled oats
  • 1/3 cup honey
  • 1/2 cup raisins (or dried cranberry)
  • 2 tablespoons chopped walnut
  • 1 tsp cinnamon

Instructions

  1. Heat oven to 350.
  2. Combine all ingredients in a bowl.
  3. Stir ingredients together.
  4. Cover a cookie sheet with parchment paper.
  5. Using a cookie scoop (2 tablespoons) scoop oatmeal treats on to a pan.
  6. Bake 10-12 minutes.
  7. Let cool for 2 minutes on pan.
  8. Remove oatmeal treats from cookie sheet.  Let cool on a plate for 10 minutes.
  9. Eat and Enjoy!
