Cranberry Almond Salad Recipe

This Cranberry Almond Salad is a simple and tasty salad to make for lunch or for a party.  A couple weeks ago, I had to bring a salad for a Teacher’s Appreciation event at my daughter’s school.  I checked out a couple of pins on Pinterest and put this salad together.  It was a big hit and the teachers enjoyed it. Cranberry Almond Salad is a delicious mix of flavors.

Maple Dijon

 

Cranberry Almond Salad Ingredients

Makes enough for 6-8 people

Salad

  • 4 cups baby spinach
  • 2 cups romaine lettuce
  • 1 cup  dried cranberries
  • 1/2 cup almonds halves
  • 1  cup feta cheese
  • 1/2 granny smith apple sliced
  • 1/2 fuji apple sliced
  • 3 slices bacon cooked and chopped

Maple Dijon Vinaigrette

  • 6 tablespoons extra virgin olive oil
  • 3 tablespoon apple cider vinegar
  • 3 tablespoon maple syrup
  • 4 teaspoon dijon mustard
  • salt & pepper to taste

Instructions

  1. Add the rinsed spinach and lettuce to bowl.
  2. Top with dried cranberries, halved almonds, feta cheese, sliced apples, and cooked bacon.
  3. Add all the ingredients for the maple dijon vinaigrette to a small container. Shake to mix. Pour over the salad.
