This Cranberry Almond Salad is a simple and tasty salad to make for lunch or for a party. A couple weeks ago, I had to bring a salad for a Teacher’s Appreciation event at my daughter’s school. I checked out a couple of pins on Pinterest and put this salad together. It was a big hit and the teachers enjoyed it. Cranberry Almond Salad is a delicious mix of flavors.
I mixed the Cranberry Almond Salad dressing in a mason jar.
Cranberry Almond Salad Ingredients
Makes enough for 6-8 people
Salad
- 4 cups baby spinach
- 2 cups romaine lettuce
- 1 cup dried cranberries
- 1/2 cup almonds halves
- 1 cup feta cheese
- 1/2 granny smith apple sliced
- 1/2 fuji apple sliced
- 3 slices bacon cooked and chopped
Maple Dijon Vinaigrette
- 6 tablespoons extra virgin olive oil
- 3 tablespoon apple cider vinegar
- 3 tablespoon maple syrup
- 4 teaspoon dijon mustard
- salt & pepper to taste
Instructions
- Add the rinsed spinach and lettuce to bowl.
- Top with dried cranberries, halved almonds, feta cheese, sliced apples, and cooked bacon.
- Add all the ingredients for the maple dijon vinaigrette to a small container. Shake to mix. Pour over the salad.
